Asparagus salad with poached egg and toasted seed mixture

In the whirlwind of hectic weekdays, we have time on weekends to really slow down, relax, immerse ourselves and concentrate on the joy of cooking and the enjoyment of flavors. At the Kitchen Exhibition held in the Sports Arena, the main exhibitor, Miele Magyarország, took part in the tableware design crash course, in addition to preparing the asparagus salad recipe, we also had the chance to taste the delicious presentation of the food.

“I showed you hearty breakfast dishes that you can use in front of family, friends, or when you want to treat yourself a little.” – says Dóra Iklódi, the event’s food stylist.

In addition to the flavors, a lot of emphasis was placed on the presentation of the food, that is, on the food design, on the Miele stage, in addition to the recipe, you can learn about the favorite practices.

Ingredients (for 2 people)

1 bunch of asparagus

6 handfuls of bird salad

2 handfuls of seed mix

2 eggs

only, bors

50 g of egg

2 tsp. vinegar

For dressing:

1 tbsp. balsamic vinegar

3 tbsp. lemon juice

1 tsp. sugar

pinch of salt

4 tbsp. olive oil

This is how asparagus salad is made

  • asparagus wash and remove the woody part. Cut into pieces and cook in lightly salted water for 3-4 minutes. Then put it in ice cold water and let it cool for a few minutes. Take it out on a paper towel and drain the water. Heat the butter in a pan, add the asparagus and fry it. Set aside to cool to lukewarm. Mix the bird salad, asparagus and dressing thoroughly in a large bowl.
  • Many people are afraid of poached egg from its preparation, although it is not a miracle: boil 1 liter of water with a large pinch of salt and vinegar. The water should be pearly enough. Beat the eggs one by one into a cup or bowl, and from there, carefully drop them into the ladle placed in the water. After cooking for 2 minutes, turn the ladle into the water and cook for another 2-3 minutes. Drain with a strainer and serve immediately or place in cold water. If you don’t like poached eggs, you can also prepare them using gentle technology Miele steamer with the help of which the eggs got a very unique, especially delicious, jelly texture in 45 minutes.
  • Then we heat a pan and fry the seeds on it. When serving, take the asparagus from the salad on a plate, sprinkle with the seeds and place the egg on top.
